This thought crossed my mind recently while having dinner with friends.
One of us was happily enjoying an extra-spicy meal, while the rest of us were reaching for water after just one bite. It made me wonder if spicy food causes a burning sensation, why do so many people actually enjoy it?
Interestingly, the “heat” from chili peppers isn’t a taste at all. The compound capsaicin binds to TRPV1 receptors, the same receptors that normally detect heat and pain. In other words, your brain is being tricked into thinking your mouth is on fire, even though no actual burn is occurring.
So why do people keep eating it? As the body responds to this sensation, it releases endorphins our natural “feel-good” chemicals which can create a pleasurable feeling after the initial burn. With repeated exposure, many people also develop a higher tolerance to spicy foods.
I find it fascinating that something our brain initially interprets as pain can gradually become something we genuinely enjoy.
