Eating too many carrots can make your skin turn slightly orange, a condition called
carotenemia
Carrots are rich in beta-carotene, the pigment that gives them their bright orange color. When you eat a large quantity of beta carotene rich foods, your body stores the excess pigment in the fat under your skin. This can lead to a yellowish orange tint, especially noticeable on the palms and soles.
It’s harmless and goes away once you cut back on those foods, but you’d have to eat a lot of carrots far more than the average diet includes to see this effect.
